Pink brick city, a walled citadel & Toulouse-Lautrec Best season (general guide): May–Jun, Sep–Oct

Occitanie, in southern France, has a capital built of pink brick, a walled citadel and a cathedral town that inspired a painter. This route spends six nights between Toulouse, Carcassonne and Albi. From Toronto you'll connect through Paris or another European hub.

How to pace it: Spend days one to three in Toulouse: day one, Place du Capitole; day two, Basilica of Saint-Sernin; day three, Cité de l'espace. Then spend days four and five in Carcassonne: day four, train to Carcassonne, then the citadel; day five, ramparts and the Canal du Midi. Then spend day six in Albi: Albi cathedral and the Toulouse-Lautrec Museum.

Toulouse is called the 'pink city' for the colour of its brick buildings. The Basilica of Saint-Sernin is a large Romanesque church, and the Capitole, the city hall, faces a huge square.

Toulouse is also a centre of the aerospace industry, and the Cité de l'espace is a museum and park about space flight.

Carcassonne's medieval citadel, the Cité, has double walls and dozens of towers on a hill above the river. The Canal du Midi passes through the lower town.

Albi's cathedral is a vast fortress-like building of red brick, and UNESCO lists the episcopal city.

Cassoulet, a slow-cooked dish of beans and meat, is the region's classic, with versions in Toulouse and Carcassonne.

Late spring and early autumn are the best times. Summer is hot, and Carcassonne is crowded in July and August.

Toulouse is a university city with a young crowd, and the riverbank by the Garonne is busy on warm evenings. Book a room inside or close to the Cité in Carcassonne if you want to walk the ramparts at night. Albi can be seen on a day trip, but staying a night lets you see the cathedral in the quieter evening light.

Good to know: Regional trains link the three towns, so you won't need a car. Visit Carcassonne's citadel early in the morning or in the evening, when tour groups have left.

Safety: Canada's advice for France is to exercise a high degree of caution (updated 11 August 2026).
